A honing rod does not sharpen. It straightens an edge that has rolled over with use, which is what makes a knife feel blunt long before it actually is. Six light passes a side, once a week, and you will go to the stone a great deal less often.

Plain white ceramic, 250 mm, with the same linen micarta handle and three brass pins as the knives.

Specification

  • Rod length: 250 mm (approx.)
  • Material: white ceramic, smooth
  • Weight: 210 g (approx.)
  • Handle: natural linen micarta, three brass pins, steel collar

What it is not good at

Sharpening. It removes almost no metal, so when an edge is genuinely worn it will not help — that is the stone's job. It is also ceramic, which means it will break if you drop it on a hard floor. Do not use it on the Bread 220.

Care

Wipe it with a damp cloth; grey marks on the ceramic are steel and come off with a little bicarbonate. Not dishwasher safe. Full details on Care & Sharpening.
