Whetstone 1000/6000
A two-sided water stone in a plain wooden cradle. 1000 grit on one face to put an edge back on, 6000 on the other to polish it. Soak it for ten minutes, work the knife at the angle it was ground to, and a dull chef's knife comes back in about five minutes.
This is the only sharpening you need for seven of our eight knives. The Bread 220 is the exception — a serrated edge cannot be flattened on a stone.

What it is not good at
Repairing real damage. A chipped or badly rolled edge wants a coarser stone around 400 grit first; starting at 1000 will take a long and discouraging time. It also wears hollow with use and will need flattening eventually — every water stone does.
Care
Rinse the slurry off, stand it on edge and let it dry completely before storing. Do not leave it soaking permanently. Full details on Care & Sharpening.
